Fluffy Lemon Cookies

Ingredients
- 3/4 cup sugar
- 2/3 cup butter, softened
- 2 cups all-purpose flour
- 2 tsp baking powder
- 2 eggs
- 2 tsp Adams® Pure Lemon Extract
Preparation
Preheat oven to 400°. In a large bowl, cream sugar and butter until light and fluffy. Whisk flour and baking powder in a separate bowl and gently add to creamed butter mixture, just until combined. Beat eggs, one at a time, until dough is mixed well. Stir in Adams® Pure Lemon Extract. Drop small scoops of dough onto a greased or lined baking sheet. Bake 10-12 minutes or until cookies spring back on touch. Cool and enjoy!
